  2. In a large mixing bowl or the bowl of a stand mixer, combine bread flour, granulated sugar, and salt. Mix well.
  3. Add the yeast mixture and vegetable oil to the dry ingredients. Mix until a dough forms. If using a stand mixer, use the dough hook attachment to knead the dough for about 7-8 minutes, until it’s smooth and elastic. If kneading by hand, transfer the dough to a lightly floured surface and knead for 10-12 minutes.
  4. Once the dough is smooth, gently fold in the cranberries, ensuring they are evenly distributed throughout the dough.
  5. Transfer the dough to a lightly greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
  6. After the dough has risen, punch it down and divide it into 8-10 equal portions. Shape each portion into a ball and then use your thumb to create a hole in the center. Gently stretch and shape the dough to form a bagel shape.
  7. Place the shaped bagels on a parchment-lined baking sheet and let them rest for about 20 minutes. Meanwhile, preheat your oven to 425°F (220°C).
  8. In a large pot, bring 3 quarts of water and 1/4 cup of honey to a rolling boil. Once boiling, carefully lower 2-3 bagels at a time into the water, boiling them for 1 minute on each side. Use a slotted spoon to remove the bagels from the water and place them back on the parchment-lined baking sheet.
  9. In a small bowl, whisk together the egg and 1 tablespoon of water to create an egg wash. Brush the egg wash onto the top of each boiled bagel. Optionally, sprinkle coarse sugar on top of the bagels for added texture and sweetness.
  10. Bake the bagels in the preheated oven for 20-25 minutes, or until they’re golden brown and fully cooked through. Remove them from the oven and let them cool on a wire rack before enjoying.
